Rainbow Choc Pops

Rainbow Choc Pops

I am so making these for my daughter's next birthday!

Makes 12


Ingredients

  • 1 litre neapolitan ice-cream
  • 12 paddle pop sticks
  • 250g cooking chocolate
  • Sugar quins or small sweets for decoration


Method

  1. Form ice-cream into small balls with a scoop or spoon and place on a lightly greased metal tray. Push a paddle pop stick into the centre of each one and freeze.

  2. Melt chocolate in microwave or on top of a double boiler and cool to desired consistency.

  3. Swirl ice-cream balls through cooled melted chocolate and quickly dip in a plate of small sweets.

  4. Return to freezer until ready to serve. Can be made several days ahead.

Curried mayonnaise eggs

These are one of my kids all time favourite foods...

Ingredients
  • 10 x eggs (to make 20)
  • 1 teaspoon curry powder
  • 2-3 tablespoons of mayonnaise or dijonnaise

Method
  • Boil the eggs for 5-10 minutes in a saucepan
  • Once cooled peel the shells off
  • With a teaspoon scoop out the yokes into a bowl and set aside the whites on a platter
  • Add the curry powder & mayonnaise to the yokes and mix it up
  • Add more curry powder/mayo/salt/pepper, etc. if you wish
  • Spoon the mixture back into the egg whites and pop in the fridge ready to serve

Chocolate crackles

Taken from the Kellogg's website

Ingredients
  • 4 cups Kellogg's® Rice Bubbles®
  • 1 cup icing sugar
  • 1 cup desiccated coconut
  • 250g copha chopped
  • 3 tbsp cocoa

Method

  • In a large bowl, mix the Kellogg's® Rice Bubbles®, icing sugar, cocoa & coconut
  • Slowly melt the copha in a saucepan over a low heat then allow to cool slightly
  • Add copha to Rice Bubbles mixture, stirring until well combined
  • Spoon mixture into paper patty cases and refrigerate until firm

Fruit skewers with chocolate dipping sauce

I'm all for the traditional kids party food, including sugary things like fairy bread and fatty things like pies and sausage rolls, as kids parties are a treat and special occasion for most kids. However, doesn't mean you can't include some healthy options. Fruit skewers are easy and look great which means the kids will want to eat them.

All you need to do is buy some seasonal brightly coloured fruit like mangoes, strawberries, bananas, rockmelon/honeydew melon, cut them into cubes/slices and thread them on to skewers. Other options:

  • Add lollies like marshmallows and raspberries
  • Hire/buy a small chocolate fountain for dipping in
  • Or buy a chocolate dipping sauce in the pots from the supermarket (tastes like that chocolate flavouring you pour in milk or on ice cream)
