Ingredients
- 10 x eggs (to make 20)
- 1 teaspoon curry powder
- 2-3 tablespoons of mayonnaise or dijonnaise
Method
- Boil the eggs for 5-10 minutes in a saucepan
- Once cooled peel the shells off
- With a teaspoon scoop out the yokes into a bowl and set aside the whites on a platter
- Add the curry powder & mayonnaise to the yokes and mix it up
- Add more curry powder/mayo/salt/pepper, etc. if you wish
- Spoon the mixture back into the egg whites and pop in the fridge ready to serve
